Mum's Banana Fritters

Mum's Banana Fritters


2 cups of self raising flour

1 table spoon of sugar

1 teaspoon of cinnamon

1 large egg

2 ripe bananas

1 cup of milk

1 & half cups of oil

30g butter

Pinch of salt

Extra sugar for sprinkling

Makes 10 fritters


Sift flour and cinnamon together and add the sugar and salt

Add the egg and milk to the dry ingredients and mix until smooth

Slice the banana into small pieces and add to the batter

Mix well and leave to rest for 5 minutes

Place a pan on the hotplate and add the oil

Bring the oil to a high heat, when hot turn the heat down to medium and add 30g of butter

Add spoon full of batter to the hot oil and shallow fry until golden brown on each side

Once cooked place on paper towel to absorb any excess oil

Sprinkle with sugar

Serve with Paper and Jam’s Homemade Lemongrass & Ginger Jelly.
